Classic Tiramisù recipe (Beccherie Tiramisu)

I came across this Tiramisu recipe a couple of years ago via the Italia Squisita YouTube channel. It instantly became my family's favorite! It's incredibly easy to make, foolproof, and uses simple ingredients. There's no need for double cream or egg whites.

I've slightly adapted the recipe to fit my preferences:

  • I'm using lactose-free mascarpone, which doesn't make any difference to its consistency or taste.

  • I don't prefer the traditional ladyfingers - they tend to become too soggy for my liking. I highly recommend using Manner's ladyfingers (pictured) as they are thinner, smaller, and much nicer.

  • I'm using far less sugar compared to the original recipe. Please use the measurements as a recommendation, and don't hesitate to adjust the sugar to your taste.

  • I've omitted the alcohol.

Ingredients

(yields at least 5 servings)

  • 6 egg yolks

  • 6 table spoons granulated sugar

  • 500g mascarpone

  • coffee

  • ladyfingers

  • cocoa powder for serving

Method

Using a large bowl, beat the egg yolks and sugar together well until you have a light-yellow, mousse-like consistency. Gently blend in the mascarpone.

Prepare the coffee (I’m using filtered coffee) - preferably mocha.

In your (ideally) glass pan, dust the bottom with cocoa powder. Quickly dip the ladyfingers one by one into the coffee, creating a single layer. Spread the mascarpone cream over the layer of ladyfingers.

Repeat the process, this time laying the ladyfingers in a 90-degree orientation to the previous layer. Spread the mascarpone cream over the top.

Refrigerate the dessert for at least 6 hours or overnight.

Only dust the top with cocoa powder just before serving.
